LN2 Ice CreamLN2 Ice CreamThe basic recipe for LN2 ice cream is 2 parts heavy cream to 1 part milk with sugar and vanilla added to taste. The basic science idea is that by quickly cooling the liquids you form very small crystals that make the ice cream smooth. If you sell Dippin Dots this is a great way to talk about how they are made using liquid nitrogen. If you're going to make this stuff be prepared for a lot of customers. It helps to have a little production line system setup to make work smoothly.

Ingredients:

  • Milk - 1 pint (16 oz.)
  • Vanilla - 3 tablespoons
  • Sugar - 1/2 cup
  • Liquid nitrogen - 5 liters
  • Half and Half (or heavy cream) - 1 quart (32 oz)

Cooking Tools:

  • Large stainless steel mixing bowl
  • Wooden mixing spoons
  • Small deli cups
  • Gloves
  • Safety glasses
  • Large sheet cake pan to catch spills

You don't go to the science museum and get handed a pamphlet on electricity. You go to the science museum, and you put your hand on a metal ball, and your hair sticks up straight...and you know science. --Michael Scott
